How do I store leftover soup?

Cool it, then keep it airtight in the fridge for 3–4 days. Most soups taste even better the next day as the flavors meld.

Can I freeze these soups?

Most freeze beautifully for up to 3 months — freeze them without the pasta or rice and add it fresh when reheating so it doesn’t turn mushy.

How do I keep a creamy soup from curdling?

Lower the heat before adding dairy and don’t let it hard-boil afterward. Stir freshly grated cheese in off the heat, a handful at a time.
