  • 1 cup dry Ditalini pasta or any small pasta
  • 2 handfuls kale stemmed and chopped

Optional Garnishes

  • freshly grated Parmesan cheese
  • red pepper flakes
  • drizzle of olive oil

Instructions

Tips for Making This Recipe

  • Don’t skip the Parmesan rind. If you have one, toss a Parmesan rind into the soup while it simmers. It slowly melts its rich, nutty flavor into the broth and gives the soup that authentic Italian taste that’s hard to replicate any other way.
  • Make ahead & storage: This soup tastes even better the next day! If you’re planning for leftovers or meal prep, cook the pasta separately and stir it into individual bowls before serving so it stays perfectly tender.
  • The mistake people make: Avoid adding the pasta too early. It will continue absorbing broth as it cooks, so adding it during the last 10 minutes keeps the pasta al dente and the soup perfectly brothy instead of overly thick.

Frequently Asked Questions

Can I use a different pasta?
Yes! While ditalini is the traditional choice for Pasta e Fagioli, small shells, elbow macaroni, or small orecchiette all work well. Just adjust the cooking time according to the package directions.
Can I freeze this soup?
RAbsolutely. For the best texture, freeze the soup before adding the pasta. When you’re ready to serve, thaw, reheat, and cook fresh pasta directly in the soup.
Can I use a different bean or greens?
Definitely! Cannellini and navy beans both work beautifully, but Great Northern beans are another great option. You can also swap the kale for baby spinach, which will wilt in just a minute or two.
