Ingredients

  • 1 package Daily’s Premium Meats Steak Cut bacon chopped
  • 1 10 oz can black beans, rinsed and drained
  • 1 10 oz can pinto beans, rinsed and drained
  • 1 10 oz can sweet corn
  • 1 orange bell pepper diced
  • 1 red bell pepper diced
  • 1 red onion diced
  • 1 mango diced
  • 1 jalapeno diced
  • 1 avocado diced
  • 1 green onion chopped
  • Handful of cilantro chopped
  • 1 cup feta

Dressing

  • 1 cup olive oil
  • 1/2 cup white wine vinegar
  • 4 limes juiced
  • 1 packet taco seasoning or 4 tbsp
  • 4 tbsp honey
  • 1/2 tsp kosher salt

To assemble

  • Tortilla chips
  • 2 cups Chihuahua cheese melted

Instructions

  • Cook the Daily’s steak cut bacon on a flat top grill until crispy. Cut into small pieces.
  • Add both beans, corn, bell peppers, onion, mango, jalapeno, avocado, green onions, cilantro and feta into a bowl.
  • Mix all the dressing ingredients and pour over the bowl of veggies and fruit; mix well.
  • Assemble: layer tortilla chips, dressed cowboy caviar and bacon, then more chips. Add melted cheese and another topping of cowboy caviar and bacon. Enjoy!
