Copycat Taco Bell Mexican Pizzas 🍕

I was genuinely a little heartbroken when Taco Bell pulled the Mexican Pizza, so I started making them at home, and now I am not sure I would go back. Crispy fried tortillas sandwich seasoned beef and refried beans, then get topped with sauce, melty cheese, and whatever fixings everyone is into. The best part is letting the kids build their own. It turns a regular dinner into a little event, and they eat every bite.

Equipment

  • 1 Cookie Sheet
  • Parchment Paper
  • 2 Frying Pans

Ingredients

  • 1 lb Ground Beef (I use 80/20)
  • 1 packet Taco Seasoning
  • 1/2 cup Olive or Avocado oil, for frying
  • 4 tortillas Flour or Almond flour tortillas
  • 1/2 can refried beans, heated (I add jalapeno slices to mine)
  • 1 cup 4-cheese blend, shredded
  • Toppings as desired: sour cream, tomatoes, green onions, jalapenos, hot sauce

Instructions

  • Preheat oven to 400 degrees and line a cookie sheet with parchment paper
  • In a frying pan, add ground beef and taco seasoning.
  • Cook until browned. Set aside.
  • In another frying pan, heat olive/avocado oil on high until it reaches (350-375 degrees – it should "pop" when you add a drop of water).
  • Fry tortilla on each side for about 2-3 minutes, or until browned and crispy.
  • Set on a paper towel to absorb excess oil when done.
  • To assemble,
    1. top one fried tortilla with a heaping tablespoon of heated refried beans,
    2. then 2 heaping tablespoons of cooked ground beef.
    3. Top with the other fried tortilla.
  • Add about 1/4 cup of enchilada sauce on top of tortilla, then shredded cheese
  • Bake for 8-10 minutes, until cheese is melted.
  • Top as desired and enjoy!
