2 Frying Pans
- 1 lb Ground Beef (I use 80/20)
- 1 packet Taco Seasoning
- 1/2 cup Olive or Avocado oil, for frying
- 4 tortillas Flour or Almond flour tortillas
- 1/2 can refried beans, heated (I add jalapeno slices to mine)
- 1 cup 4-cheese blend, shredded
- Toppings as desired: sour cream, tomatoes, green onions, jalapenos, hot sauce
Preheat oven to 400 degrees and line a cookie sheet with parchment paper
In a frying pan, add ground beef and taco seasoning.
Cook until browned. Set aside.
In another frying pan, heat olive/avocado oil on high until it reaches (350-375 degrees - it should "pop" when you add a drop of water).
Fry tortilla on each side for about 2-3 minutes, or until browned and crispy.
Set on a paper towel to absorb excess oil when done.
To assemble, 1. top one fried tortilla with a heaping tablespoon of heated refried beans, 2. then 2 heaping tablespoons of cooked ground beef.3. Top with the other fried tortilla. Add about 1/4 cup of enchilada sauce on top of tortilla, then shredded cheese
Bake for 8-10 minutes, until cheese is melted.
Top as desired and enjoy!
