Dump-and-Bake Smothered Pork Chops & Rice 🥓
Some nights I’ve got one more dinner in me. Other nights I don’t, and this is what saves those. Everything goes into one baking dish — pork chops over creamy, savory rice with green beans and mushrooms, all smothered in a mushroom-and-onion sauce. No browning, no babysitting. You stir, you layer, you cover it with foil, and the oven does every bit of the work. It comes out looking like I fussed over it, and I absolutely didn’t.

Ingredients
- 4-6 boneless pork chops
- 1 10.5 oz can cream of chicken soup
- 1 10.5 oz can cream of mushroom soup
- 1 14.5 oz can cut green beans, drained
- 2.5 cups chicken broth
- 1.5 cups long-grain rice jasmine
- 1/2 package French onion dip mix
- 1 cup sliced mushrooms
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 350°F and spray a 9×13-inch baking dish with nonstick spray.
- In the baking dish, stir together both cans of soup, the drained green beans, chicken broth, rice, French onion dip mix and sliced mushrooms until combined. Lay the pork chops on top in a single layer (do not overlap) and press them down to submerge in the liquid.
- Cover tightly with foil and bake for 90 minutes total. After the first 60 minutes, uncover, scatter the shredded mozzarella over the top, and bake another 10 minutes or so, until the rice is tender, the internal temperature of the pork reaches 145°F, and the cheese is melted. Serve.

Tips for Making This Recipe
- Stir the soups, broth, rice, and seasonings together right in the baking dish before adding the pork. Fewer dishes, and the rice cooks more evenly.
- Press the pork chops down so they’re submerged in the liquid. That’s what keeps them tender as they bake.
- Cover tightly with foil for the first hour so the rice steams and cooks through. A loose seal can leave the rice firm.
- Add the mozzarella in the last 10 minutes so it melts without overbrowning.
- Pork is done at 145°F internal. Make sure the rice is tender before pulling it, and give it a few more covered minutes if needed.
