The Banana Pudding That Never Comes Home With Leftovers 🍰
You know those famous bakery-style banana puddings people line up for? This is my version, and I make it any time I need to bring something everyone will fight over. Pillowy vanilla pudding folded with whipped cream, layered with Nilla wafers and fresh banana until the wafers go soft and cakey. It is pure nostalgia in a bowl, no baking required, and it is even better made a day ahead. I have genuinely never once brought leftovers home.

Ingredients
- 1 14 oz can sweetened condensed milk
- 1 1/2 cups ice cold water
- 1 3.4 oz box vanilla instant pudding mix
- 3 cups heavy cream
- 4 cups sliced barely ripe bananas
- Lemon juice for brushing
- 1 12 oz box Nilla Wafers
Instructions
- In a bowl, beat together the sweetened condensed milk and water until well combined, about 1 minute. Add the vanilla pudding mix and beat well for 2 minutes. Cover and refrigerate for 3-4 hours or overnight.
- Once you’re done refrigerating the pudding mixture (3-4 hours or overnight), slice bananas. Brush them with some lemon juice to prevent browning.
- In a bowl, whip the heavy cream with a mixer until stiff peaks form, about 5 minutes. Gently fold the fresh whipped cream into the refrigerated pudding mixture until no streaks of pudding remain.
- In a trifle dish or 9×13 pan, arrange 1/3 of the Nilla Wafers covering the bottom. Next, layer 1/3 of the bananas, and 1/3 of the pudding mixture. Repeat twice more, garnishing with additional wafers and bananas on the top layer. Cover tightly with plastic wrap and allow to chill in the fridge for at least 4 hours, or up to 8 hours, no longer (because bananas will start to brown).
- Enjoy!

Tips for Making This Recipe
Let it chill overnight — that’s the magic. The wafers soften into cake and the layers meld together. Fold the whipped cream in gently so it stays light and airy. Slice the bananas just before layering so they don’t brown, and use a clear bowl so all those beautiful layers show off.
Frequently Asked Questions
Why do I have to chill it so long?
The overnight rest is what turns the wafers soft and cakey and lets the flavors come together. Don’t skip it.
How do I keep the bananas from browning?
Slice them right before layering, and make sure they’re tucked into the pudding so they’re not exposed to air.
Can I make it ahead?
Absolutely — it’s designed to be made a day ahead. Just add a fresh banana layer on top before serving if you like.
How long does it keep?
Best within 2–3 days; after that the bananas and wafers get very soft.
