Lemon Parmesan Pastina

- 1 cup Dry pastina (or small pasta) you can use orzo, too
- 1 tbsp olive oil more for topping
- 5 garlic cloves, minced
- 1/4 tsp crushed red pepper flakes
- zest from half a lemon
- 1 tbsp fresh lemon juice
- 3 cups Chicken Broth
- 1 tbsp chicken bouillon
- 1/4 tsp Pepper more for topping
- 2 tbsp butter
- 2 tbsp Fresh basil, chopped more for topping
- 1/2 cup Parmesan cheese, grated more for topping
- parsley, chopped for topping
In a large, deep pan, add olive oil and heat on medium heat. Add garlic and red pepper flakes and cook for 30 seconds.
Add lemon zest, lemon juice, chicken broth, chicken bouillon powder and pepper. Mix then bring to a simmer on medium heat.
Once simmering, add uncooked pastina, and stir occasionally for about 7 minutes. Pastina will be tender and have a thin layer of stock on top.
Add butter and mix until melted. Reduce heat to low and add basil and parmesan cheese. Turn off heat and mix.
Drizzle with olive oil, more cheese, parsley and pepper for serving. Enjoy!
